Old-Fashioned Sweet Potato Sour Cream Donuts Ingr Old-Fashioned Sweet Potato Sour Cream Donuts

Ingredients

Vanilla Glaze

4 cups powdered sugar

pinch of salt

1 teaspoon vanilla

⅓ cup hot water, or more

Donuts

2 ¼ cups all-purpose flour

½ cup evaporated cane juice, or sugar 

1 ½ teaspoons baking powder

1 teaspoon salt

1 teaspoon cinnamon

¾ teaspoon nutmeg

¼ teaspoon ginger

2 Tablespoons lard

2 eggs

⅔ cup sour cream

1 cup mashed sweet potatoes, or enough to make a soft dough

lard for frying

Instructions

To make the glaze, whisk the powdered sugar and salt together until it's aerated. Stir in the vanilla and enough hot water to make a glaze that is thick enough to drizzle, but not watery.

To make the donuts, whisk the flour, sugar, baking powder, cinnamon, nutmeg, and ginger together in a bowl.

Cut in the lard until it's crumbly.

In a separate bowl, stir the eggs, sour cream, and sweet potatoes together until the mixture is smooth.

Stir the wet ingredients into the dry ones until they are combined and form a soft dough. You may need to add some more mashed sweet potatoes to get a consistency of biscuit dough.

Bring all of the dough together in a ball and flatten it into a disc.

Wrap it in plastic wrap and refrigerate for 30 minutes up to 24 hours.

Heat a few inches of lard in a saucepan until it reaches 325 degrees.

Roll out the dough to ½ an inch and cut donuts into rounds and holes with a biscuit cutter 

Fry the rounds (and holes) in the fat until they float plus 15 seconds and then carefully turn them.

Fry them for 90 seconds and then flip them again.

Fry for a final 60 seconds until transferring them to a cooling rack or towel.
As soon as they are cool enough to handle, dredge one side in the Vanilla Glaze.

Allow them to cool enough to harden the glaze until it crackles.

Ingredients 
2 large Tilapia Fish ( clean and gutted)
1 large white onion
2 garlic cloves
1/2 fresh ginger
Akpi seeds ( Ngansang)
Pebe ( Ehuru) 
Bayleafs
2 to 3 maggi cubes. Taste for seasoning 
Pinch of salt 
White pepper 
1/2 celery 
Add pinch of parsley leaves 
Scotch bonnet pepper. I used half so this depends on your taste buds.

Serve with plantains and enjoy !

This homemade cranberry sauce is a delicious twist on classic cranberry sauce  with only few ingredients 

12 ounces fresh , tin or frozen cranberries

1/4 cup orange juice and zest

1 cup brown  or white sugar

2 teaspoons ground cinnamon

The simple way ; just like its made in Italy. Made from scratch in just 10 minutes. 

Ingredients 

Egg yolks 
Sugar
Macaroons cheese
Vanilla extract
Heavy cream
Lady fingers
Espresso
Rum
Cocoa powder 

Beat whipping cream, sugar, and vanilla until soft peaks form.

Add in mascarpone cheese  and amaretto (if using) and continue to whip to stiff peaks.

Dip ladyfingers in coffee (and brandy if using) and place in an 8×8 pan to make the first layer – you can fit about 7 cookies in each layer. Don't let them soak as the will fall apart, just a quick dunk in the coffee is enough.

Spread half of the whipped cream mixture on top of the first layer of ladyfingers. Repeat process with the second layer of ladyfingers and cream mixture.

Dust the top of dessert with cocoa powder using a sieve. Refrigerate for about 2-4 hours (it gets even better in the fridge and is a perfect make-ahead dessert).

HOW TO MAKE  VANILLA ICE CREAM

RECIPE 

1. Full cream milk 4cups
2. Milk powder 1/4 cup
3. Sugar 1/4cup
4. Corn flour/starch two table spoon
5. Liquid tin milk
6. Vanilla essential/ extract 
7. Chocolate chips ( optional ) 

PROCEDURE
1. Pour your full cream into the fry pan on low heat and stir with hand turner as you saw it in the video

2. Add your milk powder and stir

3. Add your sugar and stir

4. Measure your corn flour into a plate 

5. Add liquid milk into that plate that contain  corn flour and stir smoothly.

6. Add the mixture to the fry pan on a low heat.

7. Then transfer all the mixture in the fry pan to a glass plate or rubber (big)
8. Add vanilla essential to it and whisky

9. Then pour it into any ice cream rubber or plate and store it into the refrigerator for 1hour

10. After 1hour pour it back into the plate and whisky it again.

11. Then add food colour, any food colour of your choice.

12. Then transfer it into your ice cream rubbers and refrigerate before serving it.

13. Serve in an ice cream cone of your choice or a small glass dish bowl

1kg cow skin ( pomo) 
Goat (meat)
Bush meat 
Bitter leaf (wash to desire)
Half cup of ground Crayfish
Crayfish maggi or knorr seasoning (3 cubes
Ogiri (a product of castor seeds)(optional)
Dry fish 
Stock fish 
Palm oil (about 25cl)
Salt and pepper to taste.
Ibo Cocoa-yam (pounded)
Half cup ofor (alternative tickener)

Broken rice cooked in a very rich stock . Fry the fish ( season with parsley & garlic ) . Boil both the fish and vegetables ( cassava, egg plant, aubergine, carrots, okro,  cabbage ) .  Add some lime for flavour which is optional. 
Serve with some hot 🌶 if you like spicy food
