FISH ROLLS. ( Frying method)

Fish roll is a yummy snack eaten in cameroon, nigeria and other African countries. A delicious snack made out of pastry and a filling like sardines or mackerel and fried in oil. Alternatively fish rolls can also be baked if you prefer the healthier version. To get the best fish roll, I will advise you try and make your own pastry instead of buying from the store . This snack is super tasty and slightly addictive. When you eat two you need a third and a fourth 😅. The crust on the outside is crispy and the fish filling is so full of flavour. For this recipe , the dough is elastic and perfect with the right proportion of ingredients. Get your flour, margarine, sardines in oil and all other ingredients (see below)

INGREDIENTS

DOUGH

For the dough 21/2 cups of all purpose flour

3 tablespoons of margarine (or butter at room temp)

1/4 teaspoon of baking powder

2 tablespoons of sugar

Pinch of salt

2 eggs

1/4 cinnamon

1 tablespoon evaporated milk

200mls warm water

FILLING

1 tin of sardine

Half of a medium onion

1/4 carrot

1 spring onion

1 litre oil for frying.

METHOD OF PREPARATION

Open the tin of sardine and pour in the oil into  a frying pan or pot with one tablespoon of oil.  Let it heat up for one minute then you put in the onions spring onions, carrots , chilli which is optional if you want spicy fish rolls and fry for 5 minutes.  Add in the sardine , mash it and any other vegetables you will like to use which is optional. Set aside and there you go. The filling is ready . 

For the dough , put your cups of flour in a bowl and then add the sugar, baking powder and salt . Add in the warm water and let is set for an hour . Once the dough has risen cut into four squares and use your hands to divide into small pieces like the shape of a small ball. 

Please see image above on how I rolled the dough with a rolling pin. Put in the filling, fold along the sides and set aside for frying . Pour some vegetable  oil into your frying pan or deep fryer and fry until golden brown turning from side to side . Once ready put your fish rolls on a kitchen towel which will help to absorb the oil.
